Raise your hand if you went a little overboard on the Christmas cookies this year! Me, as per usual :) My motto is everything in moderation – I will definitely have a future post on this motto, but for now, don’t be too hard on yourself.

Energy bites are something that I discovered when I traveled to NYC weekly on buying trips. This little hole in the wall called Pulp makes them while listening to reggae music, and making delicious juices, avocado toast and of course, energy bites. If you are ever in the area, I highly suggest you need to try them out at Pulp here. Once I tried them I immediately fell in love. I eat these for breakfast, a snack when I’m running errands, or even dessert when I have a sweet tooth craving. Not only are they healthy for you, but they taste delicious and are super easy to make at home.

The only kitchen appliance that you need is a food processor. They are inexpensive, and you don’t need anything fancy – Hamilton Beach $30-$40. You may already have one, and if not, they are useful for other recipes such as homemade hummus, pesto, nut butters etc. It’s definitely worth the investment.

Let the experimenting begin.

You literally can put anything into these little babies that you like. I usually use dates as my base, and then add as little or many ingredients as I’m feeling in the mood for. You can also use a combo of honey & and oats to keep the bites sticking together. I don’t really have an exact measurement for the ingredients, because I literally experiment every time. I would say that I typically use 1 cup of dates for each batch which yields about 10 bites.

Once you chop the base, throw in your favorite ingredients. Here's a list of my favorites:

  • Peanut Butter
  • Coconut flakes
  • Nuts (Almonds, Walnuts etc.)
  • Craisens
  • Protein Powder
  • Cocao Powder
  • Seeds (Chia, Flax, Pumpkin)
  • Oats
  • Chocolate chips
  • The list goes on!

Make these one Sunday, stick them in the fridge, and you will have a quick healthy snack all week! I hope you have fun experimenting and finding what works for you!
